How to make the perfect atchara

Bilang isang food lover hayaan ninyong ibahagi sa inyo ang konti kong nalalaman sa pag aachara (pickled unriped papaya), at dahil mahirap, mahal at hindi fresh ang papaya dito magbibigay ako ng altenatibong atcharang gulay (pickled vegiies) .

Una ay ang Tradisyunal na Atchara o Atsara sa Pampanga.

 

Ingredients:

Mga Sangkap

2 pieces – Red Bell pepper (capsicum)

1 small pack – raisings

2 pieces – carrots

 To prepare:

 

Step 1 – balatan ang papaya at alisin ang buto, at kudkurin sa isang shredder at ilagay sa isang malaking lalagyan.

Step 2 – Kumuha ng lumang T-shirt, siguraduhing malinis at ilagay ang ilang shredded na papaya at baluting ito pagkatapos pigaiin para lumabas ang katas. Dapat alisin ang katas dahil magdudulot ito ng masmang lasa as atchara.

Step 3 – balatan at hiwain ang carrots sa pabilog na hugis (pwedeng gawing floral design), ganun din ang red bellpepper pero strips ang hiwa. (put all ingredient to a mixing bowl including the shredded papaya (now squeezed) and the raisings.

 Mixing ingredients (sauce):

2 cups – white or clear vinegar (sukang puti)

2 cups – white sugar

1 piece – Ginger (luya)

½ clove – Garlic (bawang)

1 piece – Onion

 To prepare sauce:

Step 1 – Remove skin of ginger, garlic and onion and slice diagonaly

Step 2  – mix vinegar and sugar in a pot, put it on the stove with low heat, mix until the sugar will solidify (tunawin ang asukal) and add in sliced garlic, ginger and onion and stir slowly.

Step 3 – When mixed ingredients start to boil, turn off the stove

Step 4 – Put in all ingredients which you have prepared earlier – shredded unripe papaya, red bell pepper, carrots and raisings – mix and cover

Final Step – Let it cool until room temperature and put in a clean jar with has a good cap and refrigerate for 24 hour.

 Hindi ka magkakamali sa lasa at timpla kung sususndin mo lang ang step by step procedure na ito, ang sekreto dito ay ang sauce, dapat 1=1 or pareho ang dami ng asukal at suka.

 Ngayon dahil nasabi ko na mahirap maghanap ng fresh na papaya sa abroad, kaya mainam na gumawa ng atchara sa gulay.

alternaternatibong ingredients kung mahirap bumili ng unripe papaya

Ingredients ng Atsarang Gulay:

2 pieces – carrots

2 pieces – Pipino (cucumber)

2 pieces – labanos (kung walang labanos, pwede na talong)

2 pieces – Red Bell pepper (capsicum)

5-10 pieces – lady finger sili (pag sinigang na sili) o kaya ocra

1 small pack – raisings

 

To Prepare:

Step 1: Balatan ang carrots at labanos at hiwain ng pahaba na sinlaki ng maliit nating daliri, ganun din ang pipino at red bell pepper pero huwag balatan, ilagay ng buo ang malalakig sili.

  

To prepare sauce:

Same step sa pagluto at ingredients ng sauce sa atcharang papaya, mix mo rin ito at ilagay sa malinis na lalagyan.
